Hey!

This simple batter recipe can be used for mudcakes, cakes, brownies, Swiss rolls... pretty much for anything. I found it on the Internet and have made some adjustments, like using 1 egg instead of 2 to lower the total calories even more. The consistency is still as good.

You'll need:

  • 0.5-1 smashed fruit/some sweet potato/anythig sweet

  • 1-2 eggs

  • 3 tbslp quark or thick yogurt

  • about 1.5 dl protein powder (any flour should be fine)

  • 0.5 tsp baking soda or 1 tsp baking powder (if you use baking soda, mix it with lemon juice or something else bitter)

  • Cacao powder/cinnamon/cardamom/ginger/liquorice powder/whatever you want. Maybe some berries.

  1. Mix the fruit, egg(s) and quark/yogurt.

  2. Add the protein powder/flour and mix well.

  3. Add the baking powder or baking soda and lemon juice/something bitter. Mix well.

  4. You can add cacao powder/cinnamon/etc. and syrup and/or sugar if you want to make it sweeter.

  5. Bake in the oven.

  • 175 C/350 F. Mud cake: 7-10 minutes, normal cake: 10-20 minutes.

  • Swiss roll: 200 C/390 F, about 10 minutes.

Note: these are estimated times. Sometimes it's ready quicker, sometimes it takes longer. Ovens are different etc.

As I said, this batter can be used for pretty much any sweet recipe.
