Yes.. exactly I love baking, and typically make my own cookies and brownies so I can bring them to work to eat as a snack. However due my dramatic work schedule change to overnight, I’ve been trying to adjust and baking wasn’t at my interest.
Now that I’m back into, I was wondering what I can do to change up the recipe to increase the protein and fiber content.
I’ve made the switch of using regular white flour to Kodiak pancake mix already. But I wanted to change the butter to something else. Don’t tell me about coconut oil. I hate how it completely changes the texture of the cookie. I prefer semi dense and CHEWY cookies 🤤
So I saw you can substitute butter for Greek yogurt. If using by itself you could do a 1:1 ratio or less. In this instance I used 3/4 cups because greek yogurt is said to add more moisture to the cookies than butter. Additionally I added a cup of blended oats with 2 cups of the pancake mix
At first, when I completely the batter I was concerned because it was liquidity than normal. But the taste was alright, the oat flour threw me off. Right the batter is in the fridge so we’ll see if anything is different
