I made this burrito the other day and thought I'd share it here.

Ingredients:

  • 1/2 cup egg whites
  • 1 cup spinach
  • ¼ red or orange bell pepper
  • 1 whole wheat tortilla
  • 5 oz ground turkey
  • ½ cup mozzarella cheese
  • ¼ tbsp olive oil

Preparation Instructions:

  1. Measure out egg whites and other ingredients (They don’t have to be exact)
  2. Chop up bell peppers into about ½ inch pieces
  3. Get 2 nonstick pans heating on medium heat
  4. In one pan pour raw egg whites, put ground turkey in another pan.
  5. Stir egg whites fairly often making sure they cook all the way through. I like to cook them until they start to turn a bit golden brown. Then add salt & pepper to liking
  6. For the ground turkey, chop it up into small pieces as it cooks. Once it’s done all the way through, add your chopped peppers and spinach into the pan and mix. Cook until the spinach wilts, and the peppers soften a bit
  7. Put egg whites, turkey, and vegetables all together in your tortilla add your cheese to the top, and fold it up like a burrito
  8. Add a small amount of olive oil to one of the pans and cook the burrito on both sides until it turns golden brown
