Body fat rises during multi-day fast then falls after fast completed?


I have been doing IF with keto for over 6 months now, mostly on a 18-6 schedule and have hit a plateau. I for the last few weeks I have been trying 5-2. So far, I lose weight, but then I gain it back during the 5 days of feeding. I am still doing 18:6 during the 5 days.During the fast, I am drinking water and black coffee.One thing I notice - during the 2 day fasts, my body fat% rises and my muscle % decreases. After the 5 day feeding period, this reversed itself. This seems counter intuitive.
